  • 2 eggs
  • 4 egg whites
  • 1/2 cup buttermilk
  • 2 packets Classic Masala Oats
  • 2 tomato, chopped
  • 1 onion, chopped
  • 2 green chillies, chopped
  • 4-5 green garlic {or spring onions}
  • 10-12 chopped spinach leaves
  • 1/2 cup chopped fresh coriander
  • 1 teaspoon salt
  • freshly ground black pepper
  • 1 tablespoon butter {or Saffola oil, though eggs taste best cooked in butter}
  • 2 tablespoon parmesan

How to make Anda Bhurji Oats

  • Place everything except butter in a large bowl. Whisk to mix well
  • Heat oil in a large non-stick wok. Turn the egg mixture into it, simmer covered for 2 minutes
  • Then open and scramble over medium high flame to desired consistency, as wet or as dry as you would like it
  • Grate over parmesan cheese
  • Serve hot or at room temperature
