Ingredients

  • 6+3 Eggs
  • ¾ cup Sliced onions
  • ¼ cup Finely diced onions 
  • 2 tablespoon Ginger julienne (Thin strips)
  • 2-3 tablespoon Mint leaves (Pudhina)
  • 40 Cashew nuts 
  • 2 teaspoon Fresh red chillies sliced 
  • 4-5 Tejpatta (Indian Bay Leaf)
  • 6 Cloves (laung) 
  • 4 Green cardamom (Elaichi)
  • 2 inch Cinnamon stick (Dalchini)
  • Small piece of Nutmeg (Jaiphal)
  • 2 teaspoon Black pepper corns
  • 1 teaspoon Caraway (shahi jeera) 
  • 2 teaspoon Cumin (jeera)  
  • 1 cup Frozen or fresh peas 
  • 1 cup Frozen or fresh sweet corn 
  • 1.5 teaspoon Salt 
  • 1 cup Basmati rice 
  • 1.5 cups Water 
  • 1 tablespoon Ghee
  • ¼ cup Milk  
  • 10 strands Saffron (Kesar)

How to make Ande ki Biryani

  • Boil 6 eggs, cool, peel them and keep aside

  • Make a coarse powder of the cloves, green cardamom (elaichi), cinnamon (dalchini), nutmeg (Jaiphal) and black pepper. Keep aside

  • Soak the saffron (kesar) in warm milk and keep aside

  • Cook rice with the said amount of water with the tejpatta, 1 teaspoon salt, 1 teaspoon ghee, the caraway seeds (shahi jeera) and 1 teaspoon cumin seeds (jeera). Cooking the rice can be done in microwave or in a wide large pan. Do the other preparations while the rice gets almost cooked. Take care to take the pan off the heat as soon as the rice gets 3/4th done

  • In the meanwhile, add 1 teaspoon ghee to a pan and shallow fry the cashews on low flame till they get pink. Drain and keep aside

  • Add the sliced onions to the remaining ghee and fry them till they get brown. Do it on a very low flame since we are using minimal ghee. This is the only step that needs some patience. Drain and keep the browned onions aside

  • After draining the onions the pan will still be glazed, add half of the sliced chillies, half of the ginger julienne, the finely diced onions and a pinch of salt to the pan and then tip in the peeled boiled eggs in it. Keep turning them with the help of a spatula so they get browned from all sides. You can add more ghee for this step if you wish. Drain and keep aside

  • Add 1 teaspoon more ghee to the same pan and add 1 teaspoon cumin seeds (jeera) in it. Add half of the sliced green chillies, peas and sweetcorn as soon as the cumin (jeera) starts spluttering. Add 1/4 teaspoon salt, and mix well. Cover and cook for 5 minutes or till the peas are done. Add the powdered spices, mix well and take it off the heat

  • In the same pan scramble the 3 eggs along with a little minced ginger, sliced chillies and black pepper powder. Add a little mint leaves (pudhina) in the end. Take care the scramble looks like big chunks and not too fine

  • Now take out half of the rice from the wide pan you cooked them in. layer or lightly mix the cooked peas and sweet corn, fried cashews, mint leaves, halved boiled and browned eggs, scrambled eggs, remaining ginger julienne and browned onions

  • Cover with the remaining rice, sprinkle with saffron milk, cover the pan with a tight fitting lid and place it on very low heat or in oven (at 150 C) for 20 minutes. If cooking on gas stove, it is better to place a hot griddle (tawa) below the pan to distribute heat properly

  • Open the lid once the cooking time is over, fluff up the biryani, garnish with a few springs of mint and browned onions

  • Serve the biryani hot with a raw onion, carrots and fruits raita. Any sweet and sour kind of raita tastes great with this biryani. You don't need many accompaniments with this biryani
