Ingredients

  • 1 cup whole wheat flour     
  • 1/2 cup regular oats         
  • 1 cup mashed banana     
  • 1/4 cup Saffola oil     
  • 1/2 cup castor sugar or brown sugar 
  • 2 flax eggs                                 
  • 1 teaspoon vanilla extract        
  • 1-1/2 teaspoons baking powder                    
  • pinch of salt
  • 1/4 cup chopped walnuts     

 

For Flax Eggs

 

  • 2 tablespoons flax seeds, powdered 
  • 6 tablespoons water    

How to make Banana Oatmeal Walnut Bread

  • To begin making the Oatmeal Banana Bread Recipe, preheat the oven to 180 C and grease the loaf pan with butter and dust it with flour. Keep aside
  • Make the flax eggs, by combining the flax seed powder with 6 tablespoons of water and mix well. Allow it to rest for 15 minutes. After 15 minutes, your flax eggs will have an egg like gooey consistency. This means its ready to use
  • In a large bowl combine all dry ingredients (whole wheat flour, oatmeal, sugar, baking powder, salt). Whisk them dry using the spatula
  • To this add in the remaining ingredients, like the mashed banana, vanilla extract, oil, flax eggs, and walnuts
  • Beat the mixture until all the ingredients are well combined you get a thick batter
  • As soon as you notice that all the ingredients are well combined you can stop the beating process, as you don't want the air pockets to settle down soon after beating them
  • Spoon the bread mixture into the greased loaf pan and place it in the preheated oven
  • Bake for about 35 to 45 minutes, until when the tester is inserted into the center of the cake, comes out clean
  • Remove the Oatmeal Banana Bread from the oven and allow to rest before you can cut and serve
