Beetroot Hummus Recipe

Beetroot Hummus is a healthier take on the regular Classic Hummus. Made with beetroot, chickpeas, garlic and few spice mixes, this dip is easy to make and taste delicious. The earthy flavours of the ingredients makes it an all-time favourite. You can serve it with pita bread, crackers, or vegetable sticks, or can even use it as a spread on your sandwiches.

This recipe scores more than regular recipe because beetroot and oats are added in addition to regular ingredients making the traditional hummus even healthier and rich in fibers.

Ingredients

  • Chickpea – 1 cup
  • Beetroot – 1 cup ( Chopped )
  • Garlic cloves – 12-14
  • Tahini – 4 tbsp
  • Saffola Aura- Extra Virgin Olive and Flaxseed Oil – 6 tbsp
  • Lemon juice – 5 tbsp
  • Salt to taste
  • Roasted Cumin Powder – ½ tsp
  • Chilli flakes – 1 tsp
  • Coriander – 1 tsp ( Chopped )

How to make Beetroot Hummus

  • Wash and soak chickpeas in enough water for 5-6 hours.
  • Drain the water.
  • Add chickpeas and 2 cups of water in a pressure cooker and pressure cook the chickpeas till done.
  • Drain the water reserving 3-4 tbsp for grinding the hummus.
  • Wash and peel the beet root and boil till they are soft.
  • Drain the water and keep aside.
  • Add all the ingredients including the boiled chickpeas and beetroot in a blender and blend to make a smooth hummus.
  • Add little more water if required.
  • Garnish with chopped coriander
  • Serve with pita or any other crackers.
