  • 4 cups of broccoli florets with stems
  • 1 teaspoon butter
  • 1/4 cup of milk
  • 2 cups water or vegetable broth
  • Freshly ground black pepper
  • Salt to taste

How to make Broccoli soup with Black Pepper

  • Steam the broccoli until tender in a steamer or a pressure cooker.  Allow it to cool

  • Puree the broccoli along with 1 cup of water or broth until smooth. Strain to remove any residue

  • Transfer the broccoli to a sauce pan, add the butter, the milk and the remaining water and bring to a boil and simmer for few minutes. Add salt and crushed black pepper to taste

  • Serve the Broccoli Soup with a warm dinner rolls
