The light and healthy Broccoli Soup is made light with the addition of milk. The soup gets its full bodied flavour from the steamed broccoli florets and the addition of freshly ground pepper and the salt.
Steam the broccoli until tender in a steamer or a pressure cooker. Allow it to cool
Puree the broccoli along with 1 cup of water or broth until smooth. Strain to remove any residue
Transfer the broccoli to a sauce pan, add the butter, the milk and the remaining water and bring to a boil and simmer for few minutes. Add salt and crushed black pepper to taste
Serve the Broccoli Soup with a warm dinner rolls
