Burrito - Mexican Recipe

A Mexican wrap that is loaded with flavours and is easy to put together.

    • 4 to 5 whole wheat tortillas, (use regular tortillas if whole wheat is not available)
    • 1 cup kidney beans, boiled (Rajma)
    • 1 green bell pepper, cut into sticks
    • 1 red onion, thinly sliced
    • ½ cup frozen corn kernel
    • ¼ cup fresh coriander, roughly chopped
    • 1 tablespoon taco seasoning
    • 2 teaspoon ground cumin (jeera)
    • 1 teaspoon ground coriander

How to make Burrito - Mexican

    • Oil for stir frying the vegetables

    • Low fat sour cream for serving

    • In a pan heat about 1 tbsp oil and stir fry onions and bell peppers for just a few minutes on medium high heat. You want the veggies to be crunchy and not get too soft

    • Once slightly soft, add 2 tsp of taco seasoning and mix well. Turn the heat off, keep aside

    • In another pan add kidney beans and corn and cook on medium low for about a minute. Add cumin, coriander and 1 tsp taco seasoning and mix well. If the mixture looks too dry, add a few tablespoons of water – you want the kidney beans mixture to be slightly wet. Once mixed through, turn the heat of and keep aside


    To Assemble the Burrito



    • Place a tortilla on a plate. Add a few tablespoons of the kidney beans mixture in the center

    • Add the onion and bell pepper mix on it and sprinkle some fresh coriander leaves. Add a few small dollops of sour cream and roll the tortilla to form a wrap. Serve hot with more sour cream and salsa
