Carrot And Hummus Falafel Wrap Recipe

When summers are around and you go on picnics with friends and family, the Carrot Hummus & Falafel wrap can be made quickly when the ingredients are handy. The Carrot Hummus adds a sweet and savoury taste, while the Falafel makes it a delicious, filling affair. With such a fresh, wholesome filling bursting with nutrition and Mediterranean flavours, this will sure leave your guests grabbing for seconds.

    Ingredients for carrot hummus

    • 3 medium carrots, diced
    • 1/2 cups of cooked chickpeas (drained from its liquids)
    • 1/4 cup liquid from the cooked chickpeas
    • Juice from 2 lemons
    • 1/4 cup sesame seeds
    • 2 cloves of garlic
    • Salt to taste
    • 1/2 teaspoon of roasted cumin powder
    • 1 teaspoon Saffola Aura- Extra Virgin Olive & Flaxseed Oil
    • 1 small bunch of freshly chopped parsley

    Ingredients for falafel

    • 1 cup cooked chickpeas
    • 2 cloves of garlic, chopped
    • 1 small bunch of freshly chopped parsley
    • 1 teaspoon roasted cumin powder
    • Salt and black pepper to taste
    • Saffola Aura- Extra Virgin Olive & Flaxseed Oil, for pan-frying

    Ingredients for wrap

    • 6 wheat flour homemade tortillas
    • 2 falafel balls
    • 1 spread of carrot hummus
    • 2 tomatoes, thinly sliced
    • 1 red onion, thinly sliced
    • 1 avocado, thinly sliced
    • A bunch of lettuce leaves
    • Tabasco sauce for seasoning
    • salt and pepper to taste

How to make Carrot And Hummus Falafel Wrap

    • To make the carrot hummus, heat the Olive & Flaxseed Oil in a pan. Add the diced carrots and roast them until cooked through. Turn off the heat and allow the carrots to cool
    • Blend the sesame seeds into a smooth paste in the blender, by adding a little water. Add the remaining ingredients into the blender, including the roasted carrots, and blend to a smooth hummus.
    • Give it a taste and adjust the seasonings accordingly. Keep aside or refrigerate until ready to use.
    • Next, prepare the falafel. Combine all the ingredients, except the Olive & Flaxseed oil in a food processor. Blend to make a coarse, thick paste. 
    • Divide the falafel batter into small portions of the size of a Ping-Pong ball, and flatten them slightly.
    • Heat a Kuzhi Paniyaram Pan, add 1/2 teaspoon of Olive & Flaxseed Oil into each cavity.
    • Place the shaped falafel into the cavities, and pan fry them until it is crisp and browned on both sides. Add few more drops of oil when you flip over to fry them on the other side. This will help in getting the even color for the falafels. Once done, keep them side.
    • To begin making the Carrot Hummus Falafel Wrap, toss the tomatoes and onions in salt, pepper.
    • Place the tortilla on a flat surface. Place the lettuce leaves on the tortillas. Next, spread some hummus in the center, and add the hot falafel.  Next, top it with tomatoes, onions, avocado and Tabasco sauce, and fold into a wrap and serve immediately.
