Chicken Chow Mein with Oats Recipe

Enjoy a bowl of Chicken Chow Mein bursting with loads of fresh vegetables and chicken. The recipes cuts back on carbs and oil, yet scores high on flavour and crunch!

Ingredients

    For Noodles

     

    • 1 packet hakka noodles, cooked, drained, tossed in 1/2 teaspoon Saffola oil

     

    For Chicken

     

    • 350g boneless chicken breast, thin strips
    • 1 tablespoon minced garlic
    • 1 tablespoon chili sauce
    • 1 teaspoon soy sauce
    • 1/2 teaspoon Chinese five spice powder
    • Salt to taste
    • 1 packet Saffola Masala Classic Masala Oats
    • 1 teaspoon Saffola Oil

     

    For Vegetables

     

    • 50g carrots, cut into thin sticks
    • 100g fine sliced red and yellow bell pepper
    • 50g cabbage, shredded
    • 50g green capsicum, finely sliced 
    • 50g beans, 1 ½” long, finely sliced 
    • 50g spring onions, finely sliced
    • 100g bean sprouts

     

    Chicken Chow Mein

     

    • 1 tablespoon Saffola Oil
    • tablespoon garlic, finely chopped 
    • 1 tablespoon schezwan sauce

     

    To Finish

     

    • 25g cashew nuts, roasted in microwave for 2 minutes and cooled
    • 25g sliced garlic or spring onion greens
    • Schezwan sauce to serve {as required}
    • Green chillies in vinegar

How to make Chicken Chow Mein with Oats

    For Chicken

     

    • In a large bowl stir together the minced garlic, soy sauce, chili sauce, chinese five spice and salt. Add chicken strips and leave to marinate for 10-15 minutes. Toss in oat flour

     

    For Noodles

     

    • Cook noodles as per instructions on packet. Drain, rinse in cold water, and toss in 1/2 teaspoon of Saffola oil. Reserve

     

    For Chow Mein

     

    • Heat oil in large non stick heavy bottomed wok. Saute garlic for 2-3 minutes, and add the schezwan sauce
    • Add chicken and stir fry over high heat for 2-3 minutes until cooked
    • Add the carrots and beans, stir fry 1 minute, then bell peppers, cabbage and green capsicum, and stir fry 1 minute
    • Toss in the green onions and bean sprouts, stir well, then toss in the noodles, cashew nuts and garlic or spring onion greens
    • Mix everything well, check seasoning, add more schezwan sauce if required
    • Serve hot with a side of green chillies in vinegar
