Coconut Cream Buttermilk Panna Cotta Recipe

A guilt free pannacotta which has a tropical burst of light fresh flavour. Coconut milk and kaffir lime pairs together to offer your a lighter version of the Italian favourite ‘cooked cream’. A fresh strawberry topping adds much-needed colour and a burst of flavour and the healthy goodness of fruit.

Ingredients

  • 400ml coconut cream
  • 200ml plain cultured buttermilk
  • 1 tablespoon gelatin dissolved in 30ml warm water
  • 2 kaffir lime leaves, bruised
  • 50-75g raw white sugar

Fresh Strawberry Topping

 

  • 200g fresh strawberries, sliced
  • 15g brown sugar
  • 1 kaffir lime leaf, bruised
  • 5ml lime juice

How to make Coconut Cream Buttermilk Panna Cotta

  • Bring the coconut cream and kaffir lime leaves to a simmering boil over low-medium heat {make sure it doesn't come to a rolling boil}
  • Take off heat, and whisk in buttermilk and sugar. Leave to cool to room temperature, stirring now and then
  • Strain and divide between 6 ramekins
  • Leave to set overnight.Turn into serving plates and serve with a fresh strawberry topping

 

Fresh Strawberry Topping

 

  • Place all ingredients in a small heavy bottom pan. Simmer until the strawberries soften and the juice is nice and thick. Discard lime leaf, cool completely, then chill. {Can be made a day in advance}

Hi, When does one add the dissolved gelatin? Is coconut cream and coconut milk the same thing? And what is cultured butter milk? Thanks in advance for the response. Recipe looks interesting and would like to give it a shot. Anita
