Coconut Crusted Chicken Recipe

Coconut is one of the most versatile ingredient. In this recipe the chicken is dusted with oats powder then coated with egg white and finally rolled in dried coconut. It is then baked until crisp and served along with a dipping sauce. It makes for a great appetizer.

This recipe scores more than regular recipe because the chicken is baked instead of frying and the addition of Saffola Plain Oats also adds to the fiber and general nutrition of the dish.

Ingredients

  • ¼ cup Saffola Plain Oats
  • ¼ cup Corn Flour
  • Salt to taste
  • ½ tsp red chilli powder
  • ½ tsp black pepper powder
  • 3 egg whites
  • 300 gms Chicken Breast
  • 1 cup shredded dry coconut 

How to make Coconut Crusted Chicken

  • To make the Oats powder, add Saffola Plain Oats in a mixer and grind it.
  • Add the powdered Saffola Pain Oats, corn flour, salt, red chilli powder & black pepper powder and mix them well.
  • Whisk egg whites in another bowl
  • Coat the chicken with powdered oats mixture and then dip them in the whisked egg whites
  • Then coat the chicken with coconut flakes
  • Line the chicken pieces in a baking tray
  • Bake the chicken for 15-20 minutes to 180 deg C
  • Garnish with Coriander
  • Serve hot!
