Ingredients

  • ·         1 tsp garlic, minced
  • 2 tsp fresh ginger, minced
  • 1 tbsp Saffola oil, plus more for brushing
  • 1 tsp Sesame Oil
  • 1 pound ground chicken
  • 1 cup green cabbage, finely shredded
  • 2 scallions, finely chopped
  • 1 cup shitake mushrooms, sliced
  • 2 tbsp sweet chilli sauce
  • 12 square (7-inch) spring roll wrappers
  • Sweet chili sauce, for serving 
  • Water, as needed

How to make Crispy Baked Chicken Spring Rolls

  • Add both oils to a pan and heat it.
  • Add the garlic & ginger and sauté it till it becomes golden brown
  • Then add the ground chicken. Break it apart into smaller pieces and mix it well. Saute it till the chicken is cooked.
  • Once the chicken is cooked, add the shitake mushrooms and sauté till the mushrooms look wilted
  • Take the pan off the heat and add green cabbage & scallions and stir well till all the ingredients are combined
  • Transfer the mixture into a large bowl and keep it aside to cool for 5-10 mins
  • Spread out the spring roll wrappers on a flat dry surface
  • Add 3-4 tbsp chicken mixture in the center of each of the wrappers
  • Roll the wrappers around the mixture, folding the edges inward. Before the final fold, dip your fingers in water & then moisten the outer edge of the wrapper  to seal the spring roll shut
  • Arrange the spring rolls in a single layer on a baking tray
  • Brush the tops of the rolls with Saffola Oil & bake them for 10-12 mins at 175 deg C while rotating after 6 minutes until they are golden brown and crispy.
  • Remove the spring rolls from the oven.
  • Garnish with chopped spring onions & sweet chilli sauce
  • Serve hot!
