Ingredients

  • 4-5 eggs
  • 300g Shrimp or prawns
  • 100g cashew nuts
  • 2 large red chillies fresh (you can use dry red chillies if fresh is not available)
  • 1 red bell pepper
  • 200g mushrooms
  • 1 tablespoon Oatmeal, powdered
  • 2 teaspoon rice wine vinegar
  • 1 tablespoon soy sauce and a little more if you wish
  • 1 tablespoon fresh ginger root minced or thinly slivered
  • 1 cup spring onion only the green parts chopped
  • 1/4 cup chopped coriander greens
  • 1/2 teaspoon salt

How to make Eggs and shrimp stir fry

  • Whisk together the white of one egg along with vinegar, salt and pepper and marinade the shrimp in it for 5 minutes
  • Chop the red chillies if using fresh. Break the dry red chillies in two parts if using those. Keep aside
  • Clean and pat dry mushrooms, trim the stems if required. Remove stem, deseed and chop the red bell pepper roughly
  • Hard boil the 4 eggs, peel, halve and keep aside
  • Heat the oil in a pan and lightly fry cashew nuts, drain and keep aside
  • Shallow fry the shrimp in small batches in the same hot oil, drain and keep aside
  • It wouldn’t absorb much oil and you would have some oil left for further cooking too
  • Now coat the cut sides of the eggs in the remaining marinade and shallow fry them in the remaining oil
  • Fry very lightly, drain and keep with the shallow fried shrimps
  • Add the chopped red chillies and ginger in the same oil, wait for them to sizzle and then add the mushrooms
  • Stir fry for a couple of minutes and add the soy sauce, mix well
  • Add the spring onions and shallow fried shrimps, eggs, chopped coriander greens and cashew nuts, mix lightly and serve right away
  • If served without any rice or noodles, this dish is a good high protein meal for weight watchers
