Healthy Bruchetta Recipe

Healthy Bruschetta is a quick and easy snack that you can make for tea or as an appetizer for parties. The addition of mushrooms, oats and tomatoes, add to the freshness. It's low in fat and high in fiber as we are using the whole wheat baguettes making it light on the tummy too.

    • 1 whole wheat baguette
    • 250 grams button mushrooms, chopped
    • 40 grams Saffola peppy tomato oats
    • 3 large tomatoes, finely chopped
    • 2 cloves garlic, finely chopped
    • Salt and pepper
    • A few sprigs of chopped basil leaves
    • 1 teaspoon olive oil

How to make Healthy Bruchetta

    • Preheat the oven to 200 C
    • To begin making the Mushroom Oats Tomato Bruschetta, get all the ingredients ready
    • Heat oil in a wok, add the mushrooms and the oats and stir-fry until the mushrooms begin to release water and get cooked
    • The oats will get cooked along with the mushrooms and absorb all the water
    • Once you notice the mushrooms are cooked, turn off the heat and allow the mushrooms to cool completely
    • Once cooled, add the cooked oat mushrooms into a large mixing bow, add the chopped tomatoes, olive oil, chopped garlic, chopped basil leaves, salt and black pepper. Stir well to combine
    • Cut the baguettes into bite size squares and toast them in the preheated oven until worked and lightly crisp
    • Place the sliced baguettes on a serving platter, top it with the Oat Mushroom Bruschetta topping and serve fresh
