Ingredients

  • 500 grams of whole wheat spaghetti pasta
  • 1 teaspoon olive oil
  • 200 grams zucchini, sliced
  • 1 red bell pepper, thinly sliced
  • 200 grams mushrooms, quartered

 

For Pesto

 

  • 2 cloves of chopped garlic
  • 100 grams spinach
  • 30 grams basil
  • 1 teaspoon black peppercorns
  • 40 grams Saffola veggie twist oats
  • 1 teaspoon olive oil
  • Salt to taste

How to make Herbed Pesto Spaghetti

  • To make the pesto, blend all the ingredients together to a smooth paste. Check the salt and keep aside
  • Cook the spaghetti according to the package instructions and keep aside
  • Heat oil in a wok, add the zucchini, bell pepper and mushrooms and stir-fry them until they are lightly tender and cooked 
  • Once cooked, toss the cooked spaghetti along with the pesto into the vegetables
  • Stir for a few minutes until the pasta gets well coated with the spaghetti. Once done, check the salt and spice levels and adjust to suit your taste
  • Serve warm for dinner along with a crusted bread and soup
