Jhinge Aloo Poshto Recipe

Jinge Aloo Poshto is a very traditional dish from Bengal. Poppy seeds along with the Panch Phoran masala gives the dish a unique taste. Serve it along with hot Phulkaas for a light meal.

Ingredients

  • 1 turai/gourd
  • 1 potatoes
  • 1/4 cup poppy seeds
  • 3 green chillies
  • 1 tablespoon mustard oil
  • coriander leaves, freshly chopped
  • salt to taste
  • 1 tablespoon Saffola oil

 

For Paanch Phoron Masala

 

  • 1 teaspoon mustard seeds
  • 1/2 teaspoon jeera
  • 1/4 methi seeds
  • 1/2 teaspoon saunf
  • 1/2 teaspoon kalaunji

How to make Jhinge Aloo Poshto

  • Cut potatoes into cubes and soak in water, cut the parwal into slices
  • Mix the ingredients for paanchphodon in a bowl and keep aside.use the ingredients whole
  • In a baking dish, greased with oil enough to prepare a tadka, add paanchphodon masala and sliced green chilies
  • Place the tray in the microwave on full power for 1 ½ minute for the tadka
  • Dry grind the khuskhus or poshto into a fine powder, take out the poshto in a bowl
  • Add the vegetables into the baking tray and add salt to taste
  • Add the ground khuskhus or posto and mix well
  • Wrap the dish in a cling foil and keep slits in the film before placing in the oven on full power for 10 minutes
  • Cook the poshto till the water let out by vegetables condenses. When  well done, check the poshto for seasoning
  • Add chopped coriander for garnish and pour some mustard oil for flavouring
