Kadai vegetable is medley of delicious vegetables which is very popular in all parts of India and is known for creamy texture because of cream. We have made a healthy version of it where creaminess comes from tomatoes and the way it is cooked.
Heat oil in thick pan or kadai. Add jeera, when seeds start spluttering add ginger and chopped chilis to it, cook them for 1 minute and add tomato puree as well and cook till this masala stops sticking to the bottom, keep stirring it in-between
When masala is cooked add turmeric powder, red chilli powder , salt and mix well
Add one by one. Finally sprinkle 2 tablespoon of water and cover the kadai with a fitted lid so that steam does not escape
Cover it and cook for another 10-15 minutes till vegetables are done but not mushy
Finally finish it with sprinkle of garam masala powder and stir it well
