Kadai Vegetable Recipe

Kadai vegetable is medley of delicious vegetables which is very popular in all parts of India and is known for creamy texture because of cream. We have made a healthy version of it where creaminess comes from tomatoes and the way it is cooked.

    • 150g cauliflower
    • 100 capsicum/bell peppers
    • 100g mushroom quartered
    • 100g peas
    • 100G green beans cut into 1 inch pieces
    • 100 baby corn
    • 100g potato, cubed 
    • 200g fresh tomato puree
    • 1 teaspoon jeera
    • 1 teaspoon ginger, chopped
    • 1 tablespoon Saffola Oil
    • 1 teaspoon green chili, chopped
    • 1 teaspoon garam masala powder
    • 1 teaspoon salt
    • 1 teaspoon red chilli powder
    • Green coriander leaves to garnish

How to make Kadai Vegetable

    • Heat oil in thick pan or kadai. Add jeera, when seeds start spluttering add ginger and chopped chilis to it, cook them for 1 minute and add tomato puree as well and cook till this masala stops sticking to the bottom, keep stirring it in-between 
    • When masala is cooked add turmeric powder, red chilli powder , salt  and mix well
    • Add one by one. Finally sprinkle 2  tablespoon of water and cover the kadai with a fitted lid so that steam does not escape
    • Cover it and cook for another 10-15 minutes till vegetables are done but not mushy
    • Finally finish it with sprinkle of garam masala powder and stir it well
    • Garnish with fresh coriander and enjoy it hot
