Ingredients

    • Saffola Aura- Refined Olive & Flaxseed Oil - 2 tbsp
    • Garlic - 1 tsp 
    • Onion - ½ cup 
    • Quinoa - 1 cup 
    • Lemon juice - 2 tbsp 
    • Salt to taste
    • Vegetable stock - 2 cups
    • Coriander - 3 tbsp (Chopped)

How to make Lemon Coriander Quinoa

    • Heat the Olive & Flaxseed oil in a pan.
    • Once the oil is hot, add garlic and fry for a few seconds.
    • Add onion and fry till translucent.
    • Add quinoa, lemon juice, salt and vegetable stock.
    • Cover and cook until quinoa is softened.
    • Remove the pan from heat and let the quinoa rest for 10 minutes.
    • Add coriander and mix gently.
    • Serve as a side dish with a slice of lemon on top to squeeze over it while serving.
