Mexican Bean Oats Recipe

This tangy, three-in-one dish is super simple to rustle up, but comes packed with a heady lemon-coriander flavour and nutrients. Ingredients

    • Saffola Gold-Pro Healthy Conscious Oil 2 tbsp
    • Onion, finely chopped 4 tbsp
    • Saffola Natural Oats-Plain 2 cups
    • Rajma (kidney beans) soaked overnight and boiled ½ cup 
    • Water 2 cups
    • Frozen sweet corn 1 cup
    • Paprika  2 tsp
    • Salt 2 tsp
    • Lime juice 2 tbsp
    • Coriander leaves, finely chopped 2 tbsp

     

How to make Mexican Bean Oats

    • Heat Saffola Gold-Pro Healthy Conscious Oil in a pan and fry the onion for a minute. 
    • Add Saffola Natural Oats-Plain and stir fry for another minute. 
    • Lower heat, add rajma and stir. Add water, corn, paprika and salt, and bring it to boil. Stir again. 
    • Pour in the lime juice. Once the liquid has been absorbed and the oats cooked through and fluffy, remove from heat.
    • Transfer to 4 serving bowls and top with coriander leaves. Serve warm.
