    For Vegetable Broth



    • 1 onion, chopped
    • 1 carrot, chopped
    • 1 leeks, chopped
    • 2 stalks celery, chopped
    • 1 potato, chopped into large chunks
    • 1/3 cup mushrooms, chopped in half
    • 3 cloves whole garlic
    • 3 bay leaves
    • 8 cups water
    • dash salt and pepper



    For Chowder



    • 2 teaspoons minced fresh thyme
    • 1/2 teaspoon freshly ground black pepper
    • 1 tablespoon  Saffola oil
    • 1/2 cup carrot chopped
    • 1/2 cup onion chopped
    • 1/4 cup celery chopped
    • 2 tablespoons wheat flour
    • 1 pound medium peeled and deveined prawns
    • 1 tbsp Lemon juice

How to make Mushroom and Prawns Chowder

    For the Veg Broth


    • Place all ingredients in a large pot and bring to a boil
    • Reduce heat and simmer for at least an hour
    • Strain out the vegetables and remove the bay leaves
    • This broth can be used as a base for soups, gravies and more


    For Chowder


    • Pour broth into a 2-cup glass measure. Microwave at MEDIUM-HIGH 1 minute
    • Combine broth, thyme, and black pepper in a large saucepan over medium-high heat, and simmer
    • Heat a medium skillet over medium-high heat. Add Saffola oil to pan, swirl to coat. Add carrot, onion, and celery, sauté for 3 minutes or until tender
    • Add flour, stirring with a whisk. Stir carrot mixture and shrimp into broth mixture; cover and simmer 5 minutes
    • Stir in almond cream; cover and simmer 4 minutes
