Nachos with Beans - Mexican Recipe

This Mexican favourite gets a healthy twist with baked tortillas that make crisp nachos. A good blend of colourful vegetables, refried beans and reduced cheese adds to the appeal. The tangy avocado dip lends a burst of fresh flavour to the dish.

    • 6 X 6” corn tortillas
    • 5 ml Saffola oil




    • 5 ml Saffola oil
    • 10 grams garlic
    • 50 grams onion, chopped
    • 100 grams sweet corn
    • 50 grams red bell pepper, chopped 
    • 50 grams green bell peppers, chopped 
    • 1 can be refried beans
    • 10 ml tabasco sauce
    • 100 grams reduced fat cheese
    • 25 grams jalapenos


    Avocado Dip


    • 100 grams avocado
    • 15 ml lime juice
    • salt to taste

How to make Nachos with Beans - Mexican

    • Preheat grill to 200 C {upper element only}
    • Take a deep ceramic dish and line the base with half the nachos. Keep aside
    • Heat Saffola oil in a heavy bottom pan. Add the onions and garlic and saute for 2 minutes. Add the refried beans, bell peppers, tabasco sauce and 25 gram of grated cheese
    • Simmer until it heats through. Taste and add salt if required
    • Spread half the refried bean mixture over the chips, scatter 25 grams grated cheese. Top with remaining chips, then remaining refried beans
    • Scatter the remaining cheese over the top. Place dish under hot grill for 5-7 minutes until the cheese melts
    • In the meantime, mash avocado, stir in lime juice. Season with salt if required. Serve hot nachos with tangy avocado dip on top
