Oats Baingan Ka Bharta Recipe

Baingan Bharta is a classic Punjabi Recipe that is made from smoked and chargrilled brinjals then mish-mashed and cooked along with a combination of spices. This version of the recipe has a healthy and flavour enhancing twist with added Saffola Classic Masala Oats.

    • 1 large brinjal 400 grams
    • 1 cup pumpkin, cut into cubes 100 grams
    • 40 grams Saffola Classic Masala Oats
    • 1 teaspoon cumin seeds 5 grams
    • 2 inch piece of ginger peeled and grated 10 grams
    • 1 large onion, finely chopped 45 grams
    • 1 large tomato, grated 30 grams
    • 2 green chillies,10 grams
    • 1 teaspoon turmeric powder 5 grams
    • 1 teaspoon of garam masala powder 5 grams
    • 1 teaspoon of coriander powder 5 grams
    • 1 teaspoon red chilli powder or to taste 5 grams
    • salt to taste
    • 1 teaspoon Saffola Active oil 5 ml
    • a small bunch of coriander leaves, finely chopped for garnish 10 grams
    • ½ cup water 100 ml

How to make Oats Baingan Ka Bharta

    • Place the brinjal on the stovetop flame, with continuous monitoring, using tongs to turn the brinjal around while it is roasting. After about 10 minutes you will notice that the brinjal’s skin begins to char and the inside begins to get tender. To test, when you insert a knife, you will feel it is soft and not hard. If hard, continue to roast until done.
    • Once the brinjal is roasted, allow it to cool down. Peel the charred skin of the cooled brinjal and discard the skin. Coarsely mash the pulp using a fork or mince finely using a knife.
    • Heat oil in a pan over medium high heat. Add the cumin seeds and allow seeds to crackle. Add the grated ginger and chopped onions, sauté over medium heat until the onions are tender.
    • Then add the grated tomatoes, pumpkin, turmeric powder, green chillies, coriander powder, garam masala powder and chilli powder. Allow the pumpkin to cook until soft. Sprinkle a tablespoon of water if required.
    • Add the Saffola Classic Masala Oats. Add 1/2 cup water and stir to combine and sauté until all the ingredients come together for about couple of minutes.
    • Stir in the roasted brinjal and salt. Turn the heat to low and simmer for about 10 minutes.
    • Turn off the heat and garnish with chopped coriander leaves and serve.
