Oats Ginger And Carrot Soup Recipe

    • Saffola Aura Refined Olive & Flaxseed Oil 2 tbsp 
    • Onions, thinly sliced 1½ cup 
    • Sugar 1 tbsp
    • Black pepper, freshly ground 1 tsp 
    • Ginger, grated 1 tbsp
    • Carrots, peeled and roughly sliced 3 cups
    • Chicken stock 3 cups
    • Saffola Natural Oats-Plain ½ cup
    • Salt 1 tbsp
    • Fresh cream ¼ cup


How to make Oats Ginger And Carrot Soup

    • Heat Saffola Aura Refined Olive & Flaxseed Oil in a pan. 
    • Add sliced onion, sugar and ground pepper. Cook on low heat, covered for 20-25 minutes, stirring occasionally.
    • Add ginger and cook uncovered until the onions are golden-brown. Take off the heat and divide the mixture into half.
    • In a deep pan, bring sliced carrots to boil with chicken stock. Once the carrots are very tender, add half the caramelised onions.
    • Next, add Saffola Natural Oats-Plain and salt. Simmer for 2 minutes before taking off the heat. 
    • Using a handheld blender, puree the mixture until smooth and creamy.
    • Pour the soup into 6 serving bowls and sprinkle the remaining caramelised onions. 
    • Drizzle fresh cream on top and serve with toast on the side.
