Oats Rice Panki Recipe

A famous Gujarati delicacy, this wholesome savoury treat gets a healthy update with the dietary fibre of oats, and the strength-boosting protein-punch of urad dal. The medley of ginger, garlic, cumin and asafoetida make this hearty snack delightfully flavoursome. Weight-watchers will relish this almost zero-oil, heart-loving nutritious treat.

Ingredients

    • Saffola Masala Oats-Veggie Delight 1 cup
    • Brown rice flour 1 cup   
    • Yoghurt ½ cup
    • Urad dal flour ½ cup
    • Salt 1 tsp 
    • Water, lukewarm  3 cups
    • Cumin powder  1 tsp
    • Hing (asafoetida) ½ tsp
    • Ginger paste ½ tsp
    • Chilli-garlic paste 2 tsp
    • Banana leaves, to wrap the rolls in 2
    • Saffola Total-Pro Heart Conscious Oil 2 tsp
    • Ghee 1 tsp

     

How to make Oats Rice Panki

    • In a bowl, add Saffola Masala Oats-Veggie Delight, brown rice flour, yoghurt, urad dal flour, salt and lukewarm water. Mix well for a thick batter. 
    • Cover the batter and keep it aside for 3 to 4 hours for fermentation. 
    • Once fermented, add cumin powder, hing, ginger paste and chilli-garlic paste to the batter and mix well. 
    • Apply a little Saffola Total-Pro Heart Conscious Oil on one side of a 6-inch banana leaf. Put 2 tbsp of the batter on one half of the greased side of the leaf and spread evenly to make a thin layer. 
    • Fold over the other half of the leaf and gently press from the top to seal it.
    • Roast the panki on a moderately hot greased tava over low fire. Flip after 2 minutes.
    • Cook the panki on both sides till light brown spots appear on the leaf and the panki is cooked through. Remove from flame.
    • Peel, drizzle ghee over the dish and serve immediately with chutney of choice.
