Oats Squash Chicken Soup Recipe

It’s heart-warming goodness in a bowl! This delicately flavoured soup has just the right amount of bite with the addition of squash, which helps to lower blood sugar. Chicken is a lean meat and an excellent source of protein, while fibre-rich oats adds a heart-loving boost to this creamy concoction. Enjoy as an appetiser or even a light meal.

Ingredients

    • Saffola Aura Refined Olive & Flaxseed Oil 1 tbsp 
    • Boneless chicken,cubed 2 cups 
    • Onion,finely chopped 2 tbsp 
    • Salt 1 tsp 
    • Chicken stock 2 cup 
    • Squash, washed,peeled and cubed 1 cup 
    • Saffola Natural Oats-Plain ½ cup 
    • Cumin seeds,ground 1 tsp 
    • Lemon juice 1 tbsp 
    • Black pepper,crushed 1 tbsp 

     

How to make Oats Squash Chicken Soup

    • In a large saucepan, heat Saffola Aura Refined Olive & Flaxseed Oil. 
    • Sauté chicken and chopped onion for 2-3 minutes till the onion is tender. 
    • Sprinkle salt and stir for another minute.
    • Pour chicken stock and stir in squash cubes, Saffola Natural Oats-Plain and ground cumin. Bring to boil and reduce heat. 
    • Cover and simmer for 10 minutes or until the squash is tender.
    • Season with lemon juice and crushed pepper. 
    • Remove from heat and serve hot. Goes best with buttered toasts.
