Oats Tortilla Soup Recipe

Inspired by the Mexican Soup de Tortilla, this savoury soup is a nutritious explosion of flavours. Tomatoes, treasure troves of vitamins and minerals, combine with fibre-rich oats for an energising concoction peppered with antioxidants-rich garlic and lime. Topped with crunchy tortilla chips, this is a quick-fix tasty and healthy meal.

    • Saffola Gold-Pro Healthy Lifestyle Oil 1 tbsp 
    • Garlic, finely chopped 1 tsp
    • Onion, finely chopped 2 tbsp 
    • Salt 1 tsp
    • Tomato paste 2 tbsp 
    • Tomato, finely chopped 1 cup 
    • Pepper, crushed 1 tbsp 
    • Chicken stock 2 cup 
    • Saffola Masala Oats-Veggie Delite 2 packets
    • Tortilla chips, lightly crushed ½ cup 
    • Coriander leaves, chopped 4 tbsp 
    • Green chilli, finely chopped 1 tbsp 
    • Lime juice 4 tsp


How to make Oats Tortilla Soup

    • Heat Saffola Gold-Pro Healthy Lifestyle oil in a pan. Add chopped garlic and stir for 30 seconds. 
    • Add the onions and stir fry till the onions turn translucent and sprinkle salt.
    • Add tomato paste and stir fry until it turns a deep red. Then add the diced tomatoes and fry for another 5 minutes. 
    • Mix crushed black pepper followed by chicken stock. Bring to a boil, lower flame and simmer for 5 minutes.
    • Add Saffola Masala Oats-Veggie Delite and give it a good stir. Continue to boil for another 2-3 minutes.
    • Turn off the heat and transfer to 4 serving bowls. Top with crushed tortilla chips, chopped coriander leaves and green chillies. 
    • Finish with a dash of lime juice in each bowl and serve immediately.
