Fruit & Nut Oats Payasam

Payasam Recipe

Light and healthy Kheer made from Saffola Oats and brown rice,  flavoured with saffron and nuts. Taste it once and you will definitely add this to your list of sweet dishes for the festivals.

    • 1-litre low-fat milk                                               
    • 1 tablespoon brown rice               
    • 1 packet Saffola cranberry magic oats              
    • 6-8 saffron threads
    • 2 teaspoons ghee                          
    • 3-4 cashew nuts, chopped                                    
    • 2 teaspoons raisins                          
    • 1/4 cup sugar                                                          
    • 1/2 teaspoon green cardamom powder

How to make Payasam

    • Soak the saffron in one tablespoon of warm milk and set aside
    • Heat the ghee in a pan and lightly sauté the cashew nuts and raisins, and set aside
    • Bring the remaining milk to a boil in a thick-bottomed pan; add the rice and lower the heat
    • Cook, stirring continuously, till the rice is cooked and the milk reduces to one-third its original quantity
    • Add the sugar, oats and mix well, crushing the rice lightly while you stir
    • Add the cardamom powder and saffron-flavoured milk, and mix well. Add the sautéed cashew nuts and raisins, and mix
    • Serve hot or cold
