Peppy Tomato Oats and Sweet Potato Cutlet Recipe

The Sweet Potato Cutlet also known as patties are made from boiled sweet potatoes, combined with green peas and spiced up with green chillies and flavored with coriander. This cutlet recipe has an additional ingredient that adds to the nutrition quotient - and that’s Saffola peppy tomato oats.

Ingredients

  • 50g green peas, steamed
  • 1 large sweet potato, boiled and chopped
  • 100g of spinach, finely chopped
  • 100g paneer
  • 1 packet Saffola Masala Peppy Tomato Oats 
  • 1 teaspoon ginger, grated
  • 2 green chilies, finely chopped
  • 1 onion, finely chopped 
  • 2 tablespoons of green chutney
  • 1 tablespoon of corn flour
  • 3/4 cup of bread crumbs
  • Saffola Oil for greasing
  • Salt to taste

 

For Dhaniya Pudina Chutney 

 

  • 50g coriander leaves, chopped
  • 50mint leaves, chopped
  • 20g curry leaves, chopped
  • 30g peanuts or almonds
  • An inch piece of ginger
  • 2 green chilies
  • 2 teaspoons jaggery
  • 1 lime juice
  • Salt to taste

How to make Peppy Tomato Oats and Sweet Potato Cutlet

  • In a food processor, add the sweet potatoes, the steamed green peas, spinach, paneer, oats, a teaspoon of grated ginger, two roughly chopped green chillies, a large finely chopped onion, two tablespoons of mint chutney, some salt to taste and finally a tablespoon of corn flour binding
  • Cover the food processor and blend until the potatoes are coarsely mashed and all the ingredients come together
  • Open the processor and give the mixture a stir halfway through so the ingredients come together and blend again
  • Transfer the cutlet dough into a bowl so we can begin to shape them into kebabs or tikis
  • Grease your fingers with a little oil and shape the potato dough into bite size tikis or large lemon size balls, dust them in bread crumbs and place them on the baking tray
  • Proceed the similar way with the remaining dough
  • You can also shape the dough in the form of a cylinder like the kebabs, dust them in bread crumbs and insert them into a skewer and grill them
  • I will now place the tikis in an oven preheated to 200 C and bake for 15 minutes until lightly browned
  • After about 15 minutes, I will now remove the aloo tikis from the oven. Notice the light browning from the top. The tikis will not brown too much as they have no oil in them
  • If you want it to be crisper then you can drizzle some oil on top of the aloo tikis before they go into the oven

 

For Chutney

 

  • To make the Dhaniya Pudina Chutney recipe, combine all the ingredients and grind to a smooth paste in a blender, adding very little water
  • The addition of lemon juice enhances the flavours of mint and coriander and prevents discolouration of the greens. Check the salt and spice levels and adjust to suit your taste
  • The taste will be tangy sweet and spicy
  • Refrigerate the Dhaniya Pudina Chutney to store for a couple of days

Wonderful to go through this easy recipe...

Wonderful to go through this easy recipe ..as all are available except sweet potato..only alternative is our regular potatoes..would try it shortly and just reading this has motivated me to cook...Saffola oats will now be in my shopping list in future...All the Best ...we use only Saffola oil and for nearly twenty years...our Family good health is depending on the cooking oil we use ..my husband and I are both healthy and fine ....Thanks to Saffola oil ...and now kudos to the chef ....Vanitha
