Peppy Tomato Oats Crumb Fried Chicken Recipe

Healthy Peppy Tomato Oats Crumb Fried Chicken recipe is crispy and delicious chicken fillets that have a hint of homemade green chutney. Oats, walnuts and cornflakes ensure a healthy and crisp outer crust.

    • 1 packet Saffola masala peppy tomato oats
    • 40 grams plain non-fat corn flakes
    • 25 grams walnuts, chopped roughly
    • 25 grams parmesan cheese, grated
    • 2 eggs
    • 3 teaspoon homemade green chutney
    • 1/2 cup whole-wheat flour
    • 700 grams boneless chicken breast fillets {about 3 chicken breasts made into 2 fillets each}
    • 3 tablespoon Saffola oil

How to make Peppy Tomato Oats Crumb Fried Chicken

    • Place a fillet into a zip lock bag and pound gently until thin. Repeat for all and reserve on a platter
    • In a flattish deep dish whisk the eggs and chutney with a fork. Reserve
    • Run the Saffola masala oats, corn flakes, walnuts and cheese in a processor in short pulses to get a coarse mix
    • Set up the crumbling assembly whole-wheat flour on one plate, egg mixture in dish, and half oat mixture in another deep flat dish
    • Take one fillet, dip into whole-wheat flour to coat completely, dust gently and dip into egg mixture, then into the oat crumb mix. Lay on a platter. Repeat with remaining fillets, using up all the crumb mix
    • In a heavy bottom non-stick pan, gently heat the 1 tablespoon of oil at a time and fry the fillets over medium heat until golden and crisp, turning once. Repeat with remaining fillets
    • Serve with a chargrilled broccoli salad, oven roasted potato wedges and a dip or green chutney. Note: You can squeeze lime over them before serving
