Protein Packed Quinoa Salad Recipe

Quinoa salad is a versatile, wholesome dish that brings together all the essential nutrients without compromise on taste or flavour. Put together in minutes, it comprises of a variety of beans and is a great vegan, protein-rich alternative to eggs and meat. Salad recipe are never fixed, so go ahead and add dry fruits and greens for a bright peppiness to the dish.

Ingredients

    • Quinoa - 1 cup
    • Saffola Aura Extra Virgin Olive and Flaxseed Oil - 1 tbsp
    • Peanuts - 1/4 cup
    • Onion - 2 tbsp ( Chopped )
    • Green chillies - 1 tsp ( Chopped )
    • Yellow bell pepper - 1/4 cup ( Cubed )
    • Red bell pepper - 1/4 cup ( Cubed )
    • Green capsicum - 1/4 cup ( Cubed )
    • Green peas - 2 tbsp
    • Tomato - 1/4 cup ( Chopped )
    • Tofu - 200 g ( Cubed )
    • Salt to taste
    • Lemon juice - 1 tbsp
    • Parsley - 1 tbsp ( Chopped )

How to make Protein Packed Quinoa Salad

    • Heat 5 cups of water in a  pan.
    • Add quinoa and cook until quinoa is softened.
    • Drain and keep aside.
    • Heat Saffola Aura Extra Virgin Olive and Flaxseed Oil in a pan.
    • Add peanuts and roast unit browned.
    • Add onion and green chilli and cook for a minute.
    • Add yellow bell pepper, red bell pepper, green capsicum, green peas, tomato, tofu and salt and cook for a minute.
    • Add lemon juice and parsley.
    • Add quinoa and mix well.
    • Serve warm.
