Saffola Masala & Coriander Oats Sambhar Recipe

Is Idli/Dosa Sambhar your favourite breakfast? The Sambhar that you dip the Idlis/Dosas into gets its nutrition from the veggies and the dals that go into it. But, we have given a new twist to this classic Sambhar recipe and made it healthier by adding oats to it.

Ingredients

  • 2 tsp – Saffola oil
  • 1 - Onion (small size), finely sliced
  • 3 - French beans, finely chopped
  • 1 - Medium sized carrot, grated
  • 1 tsp - sambar powder
  • 1 packet Saffola Masala and Coriander Oats
  • 1.5 cups - water
  • 1/2 tsp - salt (or to taste)
  • 1 tsp - chopped Coriander leaves
  • 20 - Dried red chillies
  • 1 cup - Coriander seeds (dhania)
  • 1/4 cup - Channa dal (Bengal gram)
  • 1/4 cup - Urad Dal
  • 1/4 cup - Methi seeds (fenugreek seeds)
  • 1 tsp- Hing (asafoetida)
  • 1/2 tsp - Turmeric powder

How to make Saffola Masala & Coriander Oats Sambhar

  • Heat Saffola oil in a frying pan. Add sliced onion / shallots and fry till golden colour on a medium to low heat
  • Add chopped French beans and grated carrot. Mix well
  • Cover with a lid and cook on a medium to low heat for 8 minutes or until softens. Switch off the heat
  • Add Saffola Masala and Coriander Oats oats, sambar powder, salt and water. Stir all the ingredients well
  • Cover with a tight lid and cook on a low heat for 5 minutes or until oats softens / thickens
  • Sprinkle chopped coriander leaves and serve hot

Hey, Top of the evening to you. Am a regular viewer of Fit Foodie and do admire Chef VK for his interesting recipes. This recipe however, surprised me as Sambhar is a regular curry at our place. While Brinjal/Drumsticks and Ladyfingers did not find any place in this recipe, one of the most imp. ingredient -tamarind - also went missing. Am a true-blue Mallu Mumbaikar and this twist was somehow not tasty enough for me!!!!! Cheers /Rekha
