Sweet Potato Multigrain Flake Pancakes Recipe

Soft on the inside with textured crunchiness on the outside, the humble pancake’s nutrition value can be enhanced by fibre-rich sweet potato and multigrain flakes that make for a great start to the day. Adding sweet potato and no refined sugar gives it a natural sweetness. Enjoy them with a sprinkle of honey and some hot milk on the side.

    • Sweet Potato - 300 g
    • Whole Wheat Flour - 1 cup
    • Baking powder - 2 tsp
    • Salt - 1/2 tsp
    • Cinnamon powder - 1/2 tsp
    • Nutmeg powder - 1/4 tsp
    • Egg - 2
    • Saffola Active Oil - 1/2 cup
    • Saffola Multigrain Flakes- Lite Delight - 1/2 cup
    • Low fat milk - 1 cup

How to make Sweet Potato Multigrain Flake Pancakes

    • Boil sweet potato in water until softened.
    • Peel and mash.
    • Add mashed sweet potato and all the other ingredients in a  bowl and mix well.
    • You can also add dry fruits like almonds, pumpkin seeds and quinoa for more variety, if you like.
    • Heat a non stick pan, and lightly brush it with Saffola active Oil.
    • Pour some batter in the centre of the pan and spread gently.
    • Cook until golden brown from both the sides.
    • Serve hot.
