Sweet Potato Pancakes Recipe

A vegetable that hasn’t been much explored, sweet potatoes are nature’s healthy answer to our carbohydrate craving. Couple them with pancakes, and you have a great breakfast lined up! Light, fluffy and loaded with mashed sweet potato and oats, these pancakes are also quick to rustle up, indulgent and will fulfil your sweet craving without the guilt. They are also a great, fun way to get some nutrition into your kid’s diet, and they will surely love you for it!

Ingredients

    • Sweet Potato   300 g
    • Whole wheat flour   1 cup
    • Baking powder   2 tsp
    • Salt   ½ tsp
    • Cinnamon powder   ½ tsp
    • Nutmeg powder   ¼ tsp
    • Egg   2
    • Saffola Active Oil   ½ cup
    • Saffola Plain oats   ½ cup ( Powdered )
    • Milk   1 cup

     

How to make Sweet Potato Pancakes

    • Boil sweet potato in water until softened. Peel and mash.
    • Add mashed sweet potato and all the other ingredients in a bowl and mix well.
    • Heat a nonstick pan and lightly brush it with Saffola Active Oil.
    • Pour some batter in the centre of the pan and spread gently.
    • Cook until golden brown from both the sides.
    • Serve hot.
