Thai Chicken Noodle Soup With Veggies Recipe

Thai Chicken Noodle Soup Recipe is a simple and yet wholesome soup that you can have for any meal of the day. The soup is packed with vegetables and full of flavors from ginger, garlic, lemon grass and coriander leaves. Its a perfect one dish meal for the days when you want to eat healthy yet delicious at the same time.

    • 100 grams thin rice noodles 100 grams
    • 2 cloves garlic, finely chopped 3grams
    • An inch piece of ginger, thinly sliced 5 grams
    • 1 or 2 thai red chillies, sliced lengthwise 5 grams
    • 2 celery stalks, finely chopped with leaves 10 grams
    • 2 stalks of lemon grass, thinly sliced 10 grams
    • 3 cups of chicken stock 720 ml
    • 1/2 teaspoon turmeric 3 grams
    • 1 teaspoon sriracha sauce 5 grams
    • 1 tablespoon lime juice 10 ml
    • 100 grams chicken, shredded 100 grams
    • 30 grams baby corn, sliced 30 grams
    • 30 grams beans, cut length wise 30 grams
    • 1 red pepper, sliced in wedges 45 grams
    • 40 grams Saffola Chinese Oats 40 grams
    • A small bunch of coriander leaves, finely chopped 10 grams
    • Salt to taste

How to make Thai Chicken Noodle Soup With Veggies

    • To begin, cook the rice noodles as per instruction in the packet. Drain and keep aside.
    • Add the stock and the remaining ingredients, except the vegetables and coriander, to the pan and bring to a boil.
    • When the chicken is piping hot and has been boiling for about 5 to 6 minutes and is partially cooked, add the vegetables and mix everything well.
    • When the vegetables and chicken are tender, add the drained noodles and give it one more brisk boil. Turn off the heat, stir in the chopped coriander leaves and serve.
