Tomato Soup with Curry & Pepper Masala Oats Recipe

Rich, smooth and creamy, this soup gets delightful flavour with coconut milk and a hint of spice from Curry and Pepper Saffola Masala oats. It's easy to make and has a robust tomato flavour with pleasing undertones of coconut milk. Serve garnished with  whole grain bread croutons.

Ingredients

  • 600g ripe red tomatoes, quartered
  • 50g turnip, quartered {or carrot}
  • 200ml light coconut milk
  • 200ml water
  • 5g salt
  • 1 Packet Saffola Curry and Pepper Masala Oats
  • 5 ml Tabasco sauce
  • Parsley to garnish

How to make Tomato Soup with Curry & Pepper Masala Oats

  • Add the tomatoes, carrot, coconut milk, water and salt
  • Stir well, and cook under pressure for 5-7 minutes, or one whistle. Add the oats and simmer for 2-3 minutes
  • Taste and adjust seasoning if required
  • Cool slightly, and blend to a smooth puree
  • Reheat. Serve with a drizzle of Tabasco sauce if desired, and whole grain baked croutons
