Veg Kolhapuri Recipe

A fiery and spicy curry laced with famous Kolhapuri masala from Maharashtra. Reduce the red chilies to decrease the heat. The fresh dry roasted masala adds a special flavour to this traditional Kolhapuri curry which is loaded with seasonal vegetables. Serve with whole wheat chapatis or over brown rice.

Ingredients

  • 4 cloves
  • 4 whole black pepper
  • 1 green cardamom
  • 1 black cardamom
  • 15 grams whole coriander seeds
  • 2 whole red chilies
  • 20 grams desiccated coconut
  • 10 grams sesame seeds
  • 10 grams khus khus
  • 20 grams cashew nuts
  • 50 grams each potato, carrots, cottage cheese, cauliflower, beans, peas
  • 100 grams tomato
  • 5 grams ginger, garlic
  • 15 ml Saffola oil
  • 50 grams onion, chopped
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon Kashmiri red chili powder
  • pinch hing
  • 20 grams fresh coriander, chopped

How to make Veg Kolhapuri

  • Place cloves, whole black pepper, green cardamom, black cardamom, whole coriander seeds, whole red chilies in a pan and dry roast until fragrant
  • Add the desiccated coconut, sesame seeds, and dry roast until the coconut turns light golden brown
  • Add the cashew nuts. Cool and grind
  • Cut the potatoes, carrots, cottage cheese, and beans into 1-1/2” batons. Cut the cauliflower into florets
  • Blanch each vegetable separately until al dente, crisp but cooked
  • Grind the tomatoes, ginger and garlic
  • Heat Saffola oil in wok and roast onions until light golden brown
  • Add turmeric, degi mirch and hing
  • Heat Saffola oil in a wok. Saute chopped onions until light golden brown. Add the red chili powder, turmeric and hing, and stir fry for 30 seconds
  • Add the tomato puree and cook until it releases oil on the sides and is fragrant. Add 1/2 a cup of water and bring to a boil
  • Season with salt. Add the al dente vegetables and fresh coriander. Simmer for 3-5 minutes until heated through
