Vegetarian Laksa Curry Recipe

Ingredients

Ingredients For the laksa paste    

  • 3 to 4 fresh red chillies
  • 1 to 2 lemon grass stalk, chopped 
  • 5 to 6 garlic cloves, peeled 
  • 1 inch piece galangal, peeled and sliced (or ginger) 
  • 1 teaspoon coriander powder
  • Cumin seeds 1 tsp
  • Cashew nuts 1 tbsp
  • Chopped shallots 1 tbsp
  • 1 small piece fresh turmeric sliced 

Ingredients for curry    

  • 3 cloves garlic 
  • 1 large zucchini, quartered
  • 1 carrots, peeled and julienne 
  • 1 red pepper, diced
  • 4 to 5 spring onions, green and bulbs chopped    
  • 100 grams tofu, cubed 
  • 100 ml coconut milk 
  • 40 grams Saffola Masala Oats- Chinese  
  • 1 teaspoon soy sauce 
  • 150 grams wheat noodles 
  • a small bunch of coriander leaves, finely chopped
  • Juice from one lemon
  • 1 teaspoon Saffola Active Oil    
  • Salt to taste    

How to make Vegetarian Laksa Curry

  • To begin, grind all the ingredients for the laksa paste in a mixer grinder.
  • Heat the oil in a large wok. Add the Laksa mixture and fry for 2 to 3 minutes, stirring continuously.
  • Add the chopped garlic, onion bulbs and sauté for a minute. Add the vegetables and stir-fry on high heat until power cooked.
  • Add the tofu, coconut milk, soy sauce and 2 cups water and oat. Bring the curry to a boil.
  • Once done, check the seasonings and adjust according to taste. Once done, turn off the heat and stir in the chopped coriander leaves, lemon juice and stir.
  • Meanwhile, cook the noodles as per packet instructions. Rinse in cold water and keep aside.
  • To serve, place some noodles in a bowl. Ladle the laksa curry soup over it and serve hot for a delicious weeknight dinner.
