Ingredients

    • Red bell Pepper – 2-3
    • 250 g
    • Saffola Active Oil – 2 tsp 5 ml
    • Garlic – 3 to 4 cloves (Chopped)2 g
    • Carrot – ½ cup 75 g (Chopped)
    • Broccoli – ½ cup (Cut into small florets)75 g
    • Corn kernels – ½ cup 75 g
    • Saffola Pepper and Spice Oats – ½ cup 50 g
    • Water – 1 cup 200 ml
    • Salt to taste
    • Paneer – ¼ cup (Grated)50 g
    • Coriander- Few sprigs for garnishing

How to make Veggie Stuffed Bell peppers

    • Wash the Red bell Peppers, and cut them into half.
    • Heat Saffola Active Oil in a pan.
    • Add garlic, and fry for a few seconds.
    • Add carrot, broccoli, corn and peas, and cover and cook for 3 to 4 minutes.
    • Add Saffola Pepper and Spice Oats along with water.
    • Add salt to taste and cook for 3 to 4 minutes.
    • Remove the pan from the heat, and let the mixture cool.
    • Stuff the Red bell Peppers with the vegetables and oats mixture.
    • Sprinkle paneer on the top.
    • Pre-heat the oven to 180 degree C.
    • Arrange the Red bell Peppers on a baking tray, and bake them for 25 to 30 minutes.
    • Garnish with coriander.
    • Serve hot.
